Refreshing Watermelon Salad

Martha, Martha, Martha….another salad inspired by Martha Stewart.  I discovered this deliciousness back in the summer of 2007 and my family has been begging me to make it EVER since!

This recipe is adapted from Everyday Food , July/August 2007. 

When I first read this recipe, I have to be honest, the thought of putting sweet watermelon…with savory onion and feta…made me crinkle my nose. (in a bad way)  My hubby, who is more food adventurous than I, convinced me to try it.  Boy am I GLAD WE DID!!!

Savory Watermelon Salad

Watermelon is a staple of summer! That refreshing melon ~ a symbol of Summertime!
Make this for your next family gathering or BBQ…I PROMISE it will be a hit!!

Ingredients

Salad

• 12 oz. of salad (your choice or a mix – romaine, arugula, bib)
• 3 cups of seedless watermelon, cut into bite sized chunks and chilled
• 1/4 cup of thinly sliced red onion
• 4 oz of feta or goat cheese

Dressing

• 2 Tablespoons white-wine vinegar
• 2 Tablespoons of Olive Oil
• coarse salt
• ground pepper

Directions

In a small bowl whisk the white wine vinegar and oil together.  Season with your coarse salt and ground pepper.

I like to use my “Old School” Good Seasons Dressing Carafe and just shake it up!

Set the dressing aside…

Salad Tossing Time

In a large bowl, combine the salad, read onions and cheese.  

 
This time I used Goat Cheese but I have used feta…plain and seasoned.  All provide a delicious, unique flavor!

Toss with Dressing…and…YUM!!

Time for Lunch…
