I had so much fun hosting a Valentine’s Day Brunch for some of my friends! You can read about that here.
As promised…here is my yummy egg recipe!
Preheat oven to 425
Generously grease muffin tin. I use Pam cooking spray.
1 bag Simply Potatoes Hash browns (I use garlic and herb)
1 dozen eggs
8 slices of crispy cooked bacon (more if you want!)
1 cup grated cheddar
Press hash browns in muffin tins to form a basket. (Press on bottom and up the sides)
Bake at 425 for about 15-20 minutes. Until golden brown around edges.
Remove from oven and crack one egg in each hash brown basket. I break the yolk with a fork once they are in the tin.
Turn oven down to 350.
Top with crumbled cooked bacon and grated cheddar.
Bake for 15-18 minutes longer. (or until egg is set to your liking)
These are GREAT for a large gathering!
